Dessert Spaghetti Squash


If you've never tried this fun vegetable, give it a try! Your children will have fun helping you too! I've eaten spaghetti squash with stir fried or steamed vegetables on top, but my sweet tooth likes this version I made up even better!

Serves 8
1 spaghetti squash (the more yellow they are the riper they are)
1/4 cup brown sugar
2 TBS whipped butter (or butter)
1/2 tsp cinnamon (optional)
salt to taste

-Cut ends off spaghetti squash and cut lengthwise. Take out seeds and stringy flesh (just like a pumpkin). Rub squash with whipped butter and sprinkle with a little brown sugar.
-Place halves on cooking sheet and bake at 350 for 1 to 1 1/2 hours until fork tender. Scrape out squash threads with a fork into serving bowl. Add additional brown sugar, cinnamon, salt to taste. Sprinkle a little brown sugar on top to garnish and Enjoy!
