This recipe comes from a college cooking class. I consider it a comfort food. Enjoy!
3 chicken breasts, cooked and diced
(OR 1/2 head cauliflower steamed)
2 cloves garlic, minced
1 onion, chopped
1 apple peeled cored and diced
2 tsp curry pwd
1/4 c. white flour (wheat doesn't work here--sorry!)
2 c. chicken broth
1 c. cream or 1/2 and 1/2
Salt/pepper to taste
-Sauté garlic, onion and apple in butter for 5 min. Stir in curry and flour and cook 1 min. more. Add chicken, broth, and cream. Bring to a boil stirring constantly. Serve over rice or potatoes.
-Note: I also often add some cooked diced red potatoes (can steam them with cauliflower) since I usually serve this over rice.
