Adding peppers and onion to your hashed browns adds not only more vegetables to your diet, but makes the typical colorless dish much more aesthetically pleasing! It's also a great way to use up leftover "baked" potatoes, or just bake them the night before, put them in the fridge and you're ready to go the next morning.
Diced onion
Diced bell peppers
Diced Baked potatoes (red, yukon (pictured) or russet)
Seasoning of choice (salt/pepper, garlic salt, steak seasoning, Forrest Hale Herb mix, etc)
-In non-stick pan brown all ingredients together with a little olive oil in med-high heat, turning mixture about every 2 minutes until browned to your taste (for me about 6 minutes) :-) Season and enjoy.
