I recently had my fifth baby. While recovering in the hospital, a friend sent me a bag of this delicious granola. I really dislike hospital food, so I really appreciated the food gift! I just now may be addicted to this stuff! My family will eat one batch of this in one sitting, so I now make it just for me :) (although sometimes I give them the SPECIAL privilege of enjoying a bowl with me!) It is always nice to switch up my granola recipes for a change. This one is great for snacking and has more of a consistency similar to store bought granola. My slightly altered recipe was originally from smittenkitchen.com. YUM!!!
3 cups old-fashioned rolled oats
1 cup unsweetened shredded or flaked coconut
1 cup walnuts, coarsely chopped (I use pecans or pecans and almonds)
1/4 cup wheat germ, or ground flax
2 TB olive oil
1/2 tsp salt
1/2 cup maple syrup
1/4-1/2 tsp ground cinnamon
1 large egg white (I use 2 with quick oats)
1 cups dried cherries or another dried fruit (optional)
-Preheat oven to 300 degrees. Combine all the ingredients but egg white(s) in a large bowl, tossing to coat evenly. Beat the egg white in a small bowl until frothy. Stir into the granola mixture, distributing it throughout. Spread it in a single layer on a parchment-lined baking sheet and pat everything tightly together so it sticks. Or you can lightly spray your pan with olive oil if you don't have parchment.
-Bake for 45 or 55 minutes. Rotate the pan during cooking time if granola is baking unevenly.
-Cool completely. Once it's completely cool, break up granola into whatever size delights you.
