THE BEST Oatmeal...Cookies!


Again, I LOVE homemade cookies. This is my favorite oatmeal recipe that has a lot of variation options from chocolate chips to coconut flavoring. Your family will love coming home to the smell and taste of these!   The recipe is originally from my grandma, so I make them the way she did most of the time using the coconut extract and coconut for the "add-ins." 


Cream:
2 eggs
1/4 cup white sugar
1 cup brown sugar
1 cup butter
1 tsp vanilla
Add:
2 cups oats
1 3/4 cup WHEAT flour (white wheat tastes better)
1 tsp salt
1 tsp baking soda
Optional add-ins:
12oz chocolate chips
1 1/2 cups raisins
1 cup coconut (a must in my opinion)
1/2 cup heath toffee bits
1 tsp coconut extract (again this makes the cookie--a must in my opinion)
1/2 cup chopped pecans or almonds (toasted  pecans taste better)
For a citrus punch add 2 TBS orange zest!

-Bake 350 for 10-12 minutes.
-I recommend doing a few test cookies to make sure you have the flour ratio you want (more flour for thicker rounder cookies, less flour for chewier flatter cookies).
