Rachel's Lemon Chip Cookies

1 cup cold butter
3/4 cup brown sugar
1/2 cup white sugar
2 large eggs
zest from 1 lemon
1 tsp cornstarch
1tsp baking soda
1/2 tsp salt
125 grams cake flour
300 grams all purpose flour
1 1/2 cups lemon chips
4 drops doTerra Lemon essential oil

1. Preheat oven to 350 (Convection)
2. Cream together butter and sugar until fluffy and creamy. Beat in eggs, one at a time. Add dry ingredients on low speed. Add lemon chips and essential oil.
3. Refridgerate dough for 15-30 minutes
4. Create 6 oz rough balls. Place on parchment lines baking sheet.
5. Bake 10-13 minutes on middle oven rack until peaks of cookies start to brown.
6. Cook on baking sheet for 30 minutes then remove to finish cooling on wire rack.

Fresh Mint and/or Basil Dressing

My sister discovered this delicious recipe while trying to figure out what to do with her abundant Mint crop growing in her yard.  This has such a fresh taste, you will love it!  As noted in the recipe below, I have also made this same recipe using basil leaves or a combination of basil and mint and that is delicious as well!
This works well on salads, protein vegetable bowls, and street tacos.

INGREDIENTS

  • ½ cup extra-virgin olive oil
  • ½ cup lemon juice (about 2 lemons)
  • ¼ cup packed fresh mint OR Basil leaves 
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, roughly chopped
  • ¼ teaspoon fine sea salt
  • 10 twists of freshly ground black pepper
-NOTE:  I have doubled the amount of mint/basil leaves in the recipe and love that as well if you like a stronger herb flavor.  It is also really delicious to do a combination of Mint AND Basil together!

The BEST Alfredo Pasta

Here is a simple and delicious Alfredo recipe I got from a neighbor.  It is delicious--and SO NOT healthy!  But everyone needs a simple and delicious Alfredo sauce!

Heat until warm:
1 cube butter
4 oz cream cheese
1 pint whipping cream
Add:
4 oz parmesan cheese
1/2 tsp garlic salt
1/4 tsp pepper
-Serve over 16 oz penne or fettuccini
-Add grilled chicken and fresh Italian parsley if desired
-**I also HIGHLY recommend adding some fresh lemon juice and zest for make this OVER THE TOP amazing!
