Rotel Salsa

This salsa works great as a topping for any Mexican main dish, just for dipping with chips, or to mix in your guacamole!


1 10 oz can Rotel (mild with green chilies)
1 cup diced fresh tomatoes
2-3 TBS red onion, minced
2 TBS fresh lemon/lime juice
cilantro, as much as you want! (optional)

-Combine all ingredients. I usually drain a little bit of the juice off the Rotel. You can also blend all ingredients in blender if you like a smoother salsa consistency. I also like to drain the rotel, but you do not have to.
