Curried Zucchini Soup

This is a delicious soup recipe slighly altered from Everyday food.  If you want to make it a bit less healthy you can always add a little cream or 1/2 and 1/2 too :-)

1 TBS olive oil
1 onion, diced
1 tsp salt
3 garlic cloves, minced
1 1/2 tsp curry powder (add more if you want it spicier)
1-2 c. vegetable or chicken broth (depending on how thick you want soup)
3 large zucchini, sliced
3 stalks celery, diced
1 large baking potato, peeled and cut into small chunks
1/3 c. sliced almonds, toasted for garnish

-Saute onion in oil over medium heat 5 minutes.  Add the rest of the ingredients (minus the almonds for garnish) and bring soup to a boil.  Reduce heat and simmer for 15 minutes until vegetables tender.
-In batches, puree soup in a blender until smooth.  Season with additional salt/pepper to taste.
-Serve Warm garnished with toasted almonds.
