This is light and fresh. It is best if you let it sit for 1-2 hours so flavors mix. Unfortunately it doesn't make good leftovers unless you like brown avocados!
1 large ripe mango, diced1 small firm avacado, diced
1/2 red bell pepper, diced
3 TBS sweet or red onion
1 TBS white wine vinegar (in picture I actually used a pomegranate balsamic vinegar and it is yummy!)
1 TBS light olive oil
2 TBS cilantro, diced
1/2 jalapeno, ribs and seeds removed, diced (optional)
salt to taste
