Whole Wheat Sour Cream Pancakes

This is my ALL-TIME FAVORITE pancake recipe adapted from Barefoot Contessa (yes again!). This recipe is easily altered to make blueberry, banana, or apple pancakes. These make GREAT on the go snacks/meals for kids especially since they won't crumb in your car!

Makes 30 pancakes
Combine in large bowl:

3 cups whole wheat flour
1/4 cup brown sugar
4 tsp. bkg. powder
2 1/2 tsp salt
1 cup sour cream (regular or light)
2 cups soy or regular milk
6 large eggs
2 tsp vanilla extract
2 tsp cinnamon
1 cup oats (optional)

-Throw ALL ingredients into bowl and whisk together until smooth. Pour batter onto griddle using 1/4 measuring cup. Serve with sliced bananas, fresh strawberries, peaches, whipped butter, real maple syrup...
-We usually eat our pancakes with unsweetened applesauce and just a little real maple syrup.
-For FRUIT PANCAKE variations, add 1-2cups fresh/frozen blueberries, 2-4 mashed bananas, or 1-2 cups grated apple.
