Potato Latkes

These are a traditional Hanukkah dish. They are basically hashed browns in pancake form.

Makes 16 pancakes
Grate:

3 large russett potatoes
1/2 large onion
Add:
2 TBS flour (white or wheat)
1 tsp salt
pepper
2 eggs
-olive oil for frying

-Coarsely grate
potatoes and onion into a colander in the sink; squeeze out as much liquid as possible, then transfer to large bowl. Mix in egg, flour, salt, and pepper.
-Heat oil in skillet over med heat; drop ¼ c mounds of potato mixture into skillet; press lightly with spatula to flatten; cook until golden (5-6 mins per side).

-Transfer to paper towel-lined plate to drain; serve with warm, chunky spiced applesauce
(for Hanukkah style) or eat with ketcup, BBQ sauce, etc.
-Can be made ahead—just reheat on cookie sheet in 400 oven.
