Chicken Cabbage Salad

There are many versions of this salad.  This one does not use the seasoning packet and is very light on the oil and sugar.  This is a wonderful summer salad, and it is always a big hit at potluck functions.  It is also easy to make!


Serves 4-5 as a main dish
1 lb. (16 oz) package tri color cole-slaw (you can also just cut your own cabbage)
1 cup cooked and diced chicken
1 c. toasted slivered almonds
2 TBS sesame seeds (optional--they can be hard to find sometimes)
1 c. shredded carrots
3-4 green onions, diced
1 package uncooked ramen, broken into pieces (discard seasoning packet)
-Combine all ingredients in large bowl.  Then toss with dressing (recipe below)
Dressing:
6 TBS seasoned rice vinegar
1 TBS white sugar
2 TBS sesame oil
2 TBS olive oil
1 TBS soy sauce
1/4 tsp salt
freshly ground pepper
