Apple Cider muffins or Apple Cider Bundt Cake


I had a large container of fresh apple cider juice and came up with this recipe combining a few I found on the internet.  I guess you could call these TRIPLE apple muffins with the apples, apple cider, and applesauce!  These are a tasty and hearty muffin.


Makes 30-36 muffins OR 1 very large Bundt Cake
1/2 cup butter, softened
1 cup fresh apple cider juice
1 cup sugar
1 cup unsweetened applesauce
4 eggs
Add:
4 cups wheat flour
4 tsp cinnamon
1 tsp nutmeg
2 tsp soda
1 tsp salt
2 tsp vanilla
3 medium apples (any variety and feel free to leave the skin on), diced into small chunks
-Bake 350 20 minutes.
-For Bundt Cake: Add an additional 1/2 cup brown sugar and use half white/half wheat flour.  Grease and flour bundt cake pan.  Bake 1 hour and 15 min. or until toothpick comes out clean.  Serve with Caramel Sauce and Vanilla Ice Cream.
