Apple Jack Cookies

This is a recipe from a sister-in-law (from Saxon Math 2 lesson 502).  This cookie is unique in that it doesn't use cinnamon.  I love the combination of apples and cinnamon (heaven knows I go through a TON of cinnamon!) but I love this unique twist that gives your taste buds a different surprise.  Enjoy :)
 
Cream together:
1 cup light brown sugar
1/2 cup coconut oil or a mix of coconut/light olive oil
Beat in:
1 egg
Sift together & add, beat together until well blended:
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp nutmeg
Stir in:
1 cup apple, unpeeled chopped
-Shape in balls and place on a greased cookie sheet (or non­stick pan).
-Bake at 375 F for 12-­15 minutes.
