Of course you could make it un-healthy by serving with ice cream and caramel sauce, or top with cream cheese frosting if you wish! In the picture I just dusted the cake with a little powdered sugar.
1/2 c. light olive oil
1/2 c. brown sugar (or Coconut sugar)
1 1/2 c. unsweetened applesauce
2 large eggs
Add and stir in:
1 1/2 cups white wheat flour
1/2 c. oats
3/4 tsp salt
3/4 tsp baking powder
3/4 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
confectioners' sugar (optional) for serving
-Lightly oil a 9" round cake pan. Pour in mixed cake batter. Bake at 350 for 30min or until toothpick inserted in center of cake pan comes out clean. Cool cake in pan on wire rack 20 minutes. Invert and let cake cook on rack until serving time.
