This is a great (slightly altered) recipe from Everyday food. I was a bit nervous about the cilantro, but it was actually VERY good!
Serves 4
-Stir fry 2 CUPS sliced carrots with a bit of water and olive oil, tossing often.
-When just tender add 1 TBS honey. Continue to cook and scrape bottom of pan to get up browned bits to glaze carrots.
-Add 2-3 TBS finely chopped fresh cilantro. Serve immediately.
