This is a "light" pasta dish with mild flavors.
Cook al dente:
1 lb. whole grain angel hair pasta
-Set aside to drain.
Caramelize for 7 minutes over medium heat:
1 onion
1/4 c olive oil
Add and cook for 5 more minutes:
3-4 large red, orange, and yellow bell peppers, diced
3 cloves garlic, minced
Add:
Cooked angel hair
1/2 c. Italian parsely, chopped
1/2 c. pecorino romano cheese
salt/pepper to taste
-Serve warm or at room temperature.
