Apple Dumplings



















This looks a bit complicated, and it does require a bit more work than a boxed brownie dessert! But it is worth it! It is similar to apple pie only with a more cinnamon roll type twist. As a general rule, I don't try to go too healthy on desserts otherwise I don't really think it tastes like a dessert! I do try to reduce sugar a bit and use wheat flour where it works well.

Step 1-In bowl combine:
6 medium granny smith apples, peeled and grated
1 tsp cinnamon
Step 2-Dough:
1 cup white flour
1 cup white wheat flour
1/2 tsp. salt
2 tsp. baking powder
3/4 c. cold butter cut in
1/2 c. milk
-Mix dough together by hand and roll out dough into rectangle shap on floured surface. Spread apple/cinnamon mixture on top squeezing out excess juice fluid (save fluid). Roll up like a cinnamon roll and slice into dumpling sections. Place in 9x 13 pan.
Step 4: Bring to Boil:
1 c. sugar
1 3/4 c. apple juice fluid and additional water
1/4 tsp nutmeg
1/2 tsp cinnamon
1/4 c. butter
Step 5: Pour boiling mixture over dumplings in the pan
-Bake 350 for 35 minutes. Serve warm with a scoop of vanilla ice cream.
