Chilled Peach Fruit Soup

This is one of two fruit soup recipes I have (the other one is Strawberry Soup).   This can be made a day in advance.  Peaches are in full swing right now so make some of this!

5 servings
6 medium ripe peaches, peeled and sliced
1/4 cup peach juice
6 TBS fresh lemon juice
2 TBS honey
1/4 tsp cinnamon (more if desired)
dash of nutmeg
1 cup orange juice
1 medium ripe cantelope, peeled, seeded and cute into chunks (1/4 of the cantelope cut into little chunks to save for later)
Garnishes: Blackberries, blueberries, vanilla yogurt swirls, dust with cinnamon and sugar, mint leaves, mint chiffonade

-In heavy saucepan, combine peaches, peach juice, lemon juice, honey, cinnamon and nutmeg.  Heat to boiling.  Lower heat and simmer for 10 minutes.  Remove from heat and cool to room temperature.  Puree in blender and transfer back to pan.
-In blender puree orange juice and 3/4 of cut up cantelope until smooth.  Combine with pureed peach mixture in pan.  Stire to combine and add little cantelope pieces.  Cover and Chill.  Serve soup in desired bowl and garnish (see picture for ideas).
-Keeps well for about three days.

Note:  Obviously the better the peaches and melon...the better the soup!  I'd recommend buying at least two cantelope melons and using the better tasting of the two :)
